Spicy Peanut Noodles

Ingredients

1.5 lbs of ground pork
3 tbsp of rice wine
2 stalks of spring onions (minced)
1 small onion (diced)
2 cloves of garlic (minced)
2 tbsp of crunchy peanut butter*
2 tbsp of chili paste*
3/4 lbs of spaghetti noodles
Salt & Pepper

*you can add more to your taste

Directions

  1. Marinate ground pork with rice wine, salt & pepper.  Coat pan sparingly with oil.  Fry pork and as it starts cooking, break it apart into pieces.  Once thoroughly cooked, removed pork and drain on paper towels to remove excess oil.
  2. Boil pasta now.  Season to taste.
  3. Fry garlic, onions and spring onions until they are nicely browned/wilted.  Add peanut butter and chili paste.  Add this point, the mixture will be sticky.  Add some water (1-2 tbsp depending on the consistency).
  4. As the paste comes together, return cooked pork to the mix.  Once pork is nicely coated, add cooked pasta.  If mixture is still too thick, add more water.  Finally add salt & pepper to taste.
