Spinach Soup

Ingredients:

2 Tbsp unsalted butter
1/4 cup minced onion
2 cloves garlic, minced
2 tbsp all-purpose flour
1 pound spinach
4 cups milk
1 tsp salt
1/4 tsp freshly grated or ground nutmeg
1/4 tsp ground black pepper

Directions:

  1. In soup pot over medium hear, melt butter and cook onions and garlic until tender.  Stir in flour, and stir for about 5 minutes.  Do not brown flour.  Gradually whisk in milk.  Simmer, stirring occasionally over low heat until slightly thickened, about 10 minutes.
  2. Boil water, and plunge spinach in for about 1 minute.  Drain immediately and rinse with cold water.  Blend into a smooth puree.
  3. Add half the soup to blender and continue to process until smooth.  Stir puree into remaining soup and season with salt and pepper.

Makes: 5 cups
